    Grapes harvested for this champagne come from vineyards around the villages of Hautvillers, Dizy and Mareuil-sur-Aÿ, grown on clay and limestone belemite chalk; which means the grapes come from the center of the hill, the best location. After completing Assemblage (blending) and secondary fermentation in the bottle, the wine is aged on lees for 84 months. WOW! This wine is 70% Chardonnay and 30% Pinot Noir. Golden yellow hue with a hint of green, a fine mousse, a nose that is fresh, floral and elegant. The palate is balanced with flavors of hazelnut, quince paste and a long finish. "I think if you asked me to sum up Chiquet's wines in one pithy phrase, I'd have to say either "delicious and articulate" or "articulate and delicious" depending on which you preferred. . . .
